OMG I just cut the spine out of a chicken carcass.

Wow.

So, I got a book for Christmas called The Pleasures of Cooking for One by Judith Jones (who was Julia Child's and James Beard's editor). Inspired both by the book and by Julie & Julia, I have decided to cook my way through it.

The idea she has (at least from what I can tell so far) is pretty much one day of fairly intense cooking that leads to at least 3 subsequent meals. Tonight, I will be roasting a whole chicken. And so I had to go buy said whole chicken (and I feel like a good person because I got it from an organic/health food grocery store which means this chicken probably had a decent life and was butchered humanely, etc...) and just finished cutting out the spin and putting undercoating underneath the skin. This is more intense than like, anything I've ever done before cooking wise so I'm pretty proud of myself.

I've saved the spine and wing tips to make real chicken broth at some point. And now I am trying to make some sort of egg dish using the liver.

I will be reporting back how things go (and there may even be pictures!)
